“ I'd really like some hands-on learning, but I'm not sure what places are trustworthy. And I don't mean just making rolls; I want to make real sushi rice and slice up fish for both nigiri and sashimi. ”

I went there with Melissa and a couple friends. It was really fun. We learned California and Rainbow rolls and Hand rolls. At the end we got to take home a boat load of sushi. Our instructor was "Jimbo" - ask for him.
(I'm not sure if that location is right... I remember it being only a few miles away from Marina Del Rey.)

When Dustin says we brought home a boat load of sushi, he means a SHIT LOAD of sushi :) It was great. Have a party afterwards. Jimbo is the kind of guy that you want to be friends with. He once made sushi for Kanye West (but Kanye only put the sushi on a naked girl or something and didn't even eat it....it was for a video.) But I digress....This class was great and entertaining.
